Eggplant Salad
Way back April when I was still in Norway, Market Man of Manila posted on his terrfic food blog about Grilled Eggplant Salad
I knew I would have to wait for a while before I will have a chance to do this. First because I hardly saw good aubergines in Oslo and secondly I wanted good sweet tomatoes that has ripen under the Mediterranean sun.
It is very easy to do and very refreshing. I used a good balsamic vinegar and served this aubergine salad with roast chicken.
Market Man said this salad will go with seafood as well.
My husband was expecting a greek melitzano salata where the “meat” of the aubergine is reduced to a pulp and serve as dipping.But he loves this, so did I (I hated aubergine when I was young!)
Oh that’s so good! I love eggplant! Now all you have to do is add bagoong and it’s a Filipino salad. 😛
Shatzli that’s the best looking talong and kamatis salad I’ve seen! The tomatoes look stunningly ripe and I can almost taste the sweetness! The sald is also good if you cook and peel eggplants and leave them whole, then slightly grill tomatoes and serve them whole. Sprinkly good greek olive oil, salt and pepper and a touch of red wine vinegar if you like. Yum!
sha I like that! I learned making moizaka (is that the right spelling?)and some greek salads. I particularly like greek olives. chloe loves olives, too.
Sha, I have not eaten eggplant salads for 8-10 years now! Your entry made me remember those homey treats! We usually eat those salad with anything fried or even with chicken and pork on the side… Yummy!
TONI bagoong yes but I rarely buy it because I need to cook that and the flat will smell..
MMan: thank you I just bought a different variety of eggplant the one you used the slender long one I will cook it again am sure we dont mind having it once a week.
